I will start of this article with several links to articles about wing clipping and the pros and cons. I will follow up with some of my own thoughts and visual illustrations.

As you read the articles it is universally agreed that you should seek and experienced person or a vet to show you how to clip wings.
As for myself, which I learned by a fatal accidental death is that hand/finger positions while restraint is important. In my case I was clipping a 4 week-old babies wings and when I pressed my fingers against the crop the food gushed up and aspirated the baby. Err on the side of caution and check the crop first to see that it is empty. In another instance I lost an adult male during restraint while just extending the wing. There are numerous air sacs within the body cavity and restraint can interfere with airflow and breathing.

There are numerous styles of wing clips. All will agree to clip both wings.
